Ingredients:
- 2 cups flattened rice flakes (Poha)
- 1 onion, chopped
- 1 potato, peeled and chopped
- 1/4 cup peanuts
- 1 green chili, chopped
- 1 tablespoon mustard seeds
- 1 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- Salt, to taste
- Sugar, to taste
- 2 tablespoons oil
- Fresh coriander leaves, chopped, for garnish
Poha: Flattened Rice Flakes
Method of Preparation:
First, clean the flattened rice and rinse it in a bowl of water. Use a spoon to separate the flattened rice. Add ¾ teaspoon of salt and sugar to it and mix well. Leave the flattened rice aside for 15 minutes to soften it. Use a spoon to stir it once in between to prevent it from sticking and ensure that it remains fluffy.
Heat a pan and add 1 teaspoon of oil to it. Once the oil is hot, add the peanuts to the pan and continuously stir until they turn crispy and change color. Once the peanuts change color and a nice aroma comes from them, take them out and keep them in a separate bowl.
To make Poha, heat 1-2 tablespoons of oil in a pan. Add mustard seeds and when they start to splutter, reduce the heat and add other spices like green chilies and turmeric powder. Add chopped curry leaves and mix well. Then, add Poha and mix it with the spices for 2 minutes.
After 2 minutes, reduce the heat and add lemon juice to the Poha. Serve the Poha on a plate and garnish it with peanuts, and chopped coriander. Place a few slices of lemon on one-fourth of the plate.
Note:-
- For making Poha, take medium-thickness flattened rice.
- If you don't want to add peanuts, then don't add them.
- If you want, you can also use pre-roasted peanuts.
- If you like it spicier, you can add 2 green chilies, and if you are making Poha for children, then don't add chilies.
- If curry leaves are not available, you can still make Poha without them.
